Santa's blanket salad

A creamy, chilled salad named for its blanket of whipped topping over layers of fruit and gelatin — make it a day ahead to let it set fully.

You'll need

• 1 package (6 oz.) strawberry gelatin
• 2 cups boiling water
• 1 can (20 oz.) crushed pineapple, drained (juice reserved)
• 2 cups miniature marshmallows
• 8 oz. whipped topping

How to make it

1. Dissolve gelatin in boiling water, then stir in the reserved pineapple juice.
2. Fold in the drained pineapple and marshmallows, pour into a 9x13 dish, and chill until firm, about 3 hours.
3. Spread whipped topping evenly over the set gelatin just before serving.
4. Cut into squares and serve chilled.
